Beef Vegetable Soup for the Crock Pot

This can also be made in a Dutch oven, but if you’re pressed for time your crock pot can do the heavy lifting for you.

1 pkg beef cubes
1 can beef stock
2 tbsp flour
1 medium sweet onion, sliced
4 large Yukon Gold potatoes, cubed
4 large peeled carrots, cubed
1 cup frozen green beans
1 cup frozen corn
1 cup frozen lima beans
3/4 cup Alphabet Pasta or Pasta Stars
3 16 oz. cans V8 juice
1-2 peeled whole garlic cloves
Salt and pepper to taste


Dump all the ingredients into the crock pot, crank it up to low, and leave it on for about 9 hours.  That’s it.  If you want, you can slice some cabbage on top for serving.  Or, you can serve it with warm and toasty grilled cheese sandwiches, like we’re going to do.  Yum!
